Veggie Almond Buttercup Smoothie
Last week I was back in NYC and Greenwich, CT… oh it felt so good to be “home”! And while I was there I visited Juice Press, almost everyday, to get my daily fill of nutritious smoothies and juices.
One smoothie I particularly LOVE is their Almond Buttercup! Wow, this thing goes down before you even leave the store! However, I felt a little guilty because it was missing my favorite buddies: veggies! And it had a little too much sugar in the form of dates and a lot of banana.
*Dates are an amazing fruit because they contain fiber and the sugar is low-glycemic: aka doesn’t raise your blood pressure. But be careful! A few of these in your smoothie can be equivalent to eating a piece of cake or your favorite candy bar… at the end of the day, sugar is sugar.
So today I put my own twist on the Almond Buttercup which incorporates veggies, yay, and decreases the sugar!
This is a great protein rich smoothie to enjoy on the go or during your 3:00pm slump. I dare you not to drink all of it before you leave the kitchen!
Veggie Almond Buttercup Smoothie
1 banana
3 tbs raw almond butter
1 handful organic baby spinach
1/2 avocado
2 tbsp raw cacao powder
1 tbsp chia seeds
1 tsp ground cinnamon
1/4 tsp vanilla extract
pinch Himalayan salt
1 cup water
ice to blend and chill
In a high-speed blender, combine all ingredients. Blend on high until ingredients come together smoothly. Poor into a glass and enjoy!
