Gluten Free Cinnamon Roll Cup Cakes with Oat Crumble
I am definitely not one to resist the cravings and pleasures that this wonderful world has to offer. Something as simple as cinnamon and sugar can make your toes curl in you socks and bring back sweet childhood memories.
This was particularly true for my husband the other day. He had smelt cinnamon from a distance and began to reminisce about making his own homemade cinnamon rolls as a child. He described the whole processes to me, which was very endearing! You could see a flood of good memories rushing into his mind which had a trickle effect to the rest of his physical body. He was in a state of bliss!
After I listened to his story and saw the way a positive memory changed his state of being so I had to fill the apartment with the aroma of cinnamon in the oven!
But, due to our gluten free life style, making a dough for the rolls with what I had on hand was just not going to happen. I dug through my pantry and pulled out a bag of Pamela’s Gluten Free Vanilla Cake Mix which I keep on hand in any “emergency” such as this. I followed the instructions on the package while adding a few tweaks to turn this vanilla cake into a cinnamon bliss!
Preheat oven 325
Makes: 12 cupcakes
1 package of Pamela’s Gluten Free Vanilla Cake Mix
3 Eggs
1/2 cup Organic Spectrum Canola Oil
2/3 cup water
2 tsp Simply Organic Ground Cinnamon
2 tbsp Kerrygold Irish Butter cubed
1/2 cup Bob’s Red Mill Gluten Free Oats
2 tbsp Big Tree Farm’s Coconut Sugar *
*I use coconut sugar because it is low glycemic. It is also less refined than white sugar and gives a toasty deep flavor to the crumble.
Grease a muffin tin with whatever oil you have on hand, canola or I use coconut oil. In a large bowl, mix together cake mix, eggs, canola oil, water, and 1 tsp cinnamon. Pour batter into greased muffin tin.
In a separate bowl, combine the cubed butter, oats, 1 tsp cinnamon, and coconut sugar. Mix well with clean hands until it resembles wet sand. Place crumble topping on each of the cupcakes.
Place in oven and bake for 22-26mins.
